Yummy-Yam Soup

A Perfect start for the New Year 

They’re really sweet potatoes in disguise, but don’t let this one fool you. It’s so delicious. It’s makes plenty for sharing! 

  • 1 tablespoon butter 
  • 1 cup fresh yam (shredded) 
  • 1 small onion, diced 
  • 2 cups canned yams 
  • 3 1/2 cups milk 
  • 2 tablespoons flour 
  • 2 tablespoons pecans (optional) 1⁄2 teaspoon cinnamon 

Using a large non-stick pot, add butter, melt. Add onion and fresh yams. Sauté until golden brown. Add yams, milk, flour, pecans and cinnamon to a blender. Puree’. Add to pot. Cook until hot. Stir often. 

The fresh yams add texture. Should your palate prefer a smoother taste, puree the onions and yams as well. Be certain to cool before adding to blender. Then re-heat and eat.
